A rhino has terrible eyesight and an extraordinary nose. It doesn't chase what glitters — it follows scent, patience, and habit. We buy the same way: we taste before we shelve, and we'd rather sell one bottle we believe in than ten we don't.
That means slower restocks, shorter shelves, and a staff who will tell you honestly when something isn't worth your money.
